Description
The Material Science of Pure Triply Omni-Heat Distribution
For purists who refuse to cook on synthetic non-stick coatings, the Stahl Artisan 18 cm Kadhai represents the gold standard of raw material engineering. During our hands-on testing, we observed the true power of its “Omni-Heat” Triply construction. Unlike cheap single-ply steel that scorches food instantly, this kadhai sandwiches a thick layer of conductive aluminum directly between a surgical-grade SS-304 interior and a magnetic SS-430 exterior. This means thermal energy doesn’t just hit the bottom—it flows rapidly and evenly up the sidewalls. We were able to fry spices uniformly without the dreaded center hot-spot that plagues traditional Indian steel vessels.
Solving the Small-Batch Oil Waste Dilemma
Using a standard 3-liter kadhai to fry a small batch of papads or make a tadka requires a massive amount of oil just to cover the wide base. At just 18 cm in diameter with a 1.2-liter capacity, this compact Stahl kadhai solves that dilemma. It allows for deep-frying in a highly concentrated pool of oil, drastically reducing kitchen waste while providing heavy-duty triply thermal stability.
Investment Cast Ergonomics and Lifetime Durability
Even on a vessel this compact, Stahl has not compromised on ergonomics. We were highly impressed by the custom-made Investment Cast Stainless Steel handles. Because they are riveted firmly to the body and lack any plastic or Bakelite components, the entire kadhai (including the solid stainless steel lid) is inherently oven-safe and practically indestructible. The custom easy-pour edges proved their worth during our tests, allowing us to transfer piping hot tadka over dal without a single drop spilling onto the stovetop.
Geometrical Layout, Build Quality, and Maintenance
With a 1.2-liter brim capacity, this kadhai is strictly designed for 1 to 2 people, or for dedicated side-dish preparations. Since it features a pure SS-304 interior with absolutely no coatings, it requires specific techniques to unlock its full potential without food sticking.
- Cooking Protocol (The Water Drop Test): Always pre-heat the pan on medium for 2 minutes before adding oil. If a drop of water glides around like a mercury bead (the Leidenfrost effect), the pan is ready and will act naturally stick-resistant.
- Cleaning Protocol: Wait for the pan to cool to avoid thermal shock warping. It is 100% dishwasher safe. If you encounter protein stains or white calcium marks, a quick scrub with baking soda or a few drops of white vinegar restores the mirror polish instantly.
Target Demographics: Is this 1.2L Stahl Triply Right For You?
The Stahl Artisan Triply 1.2L is an engineered masterpiece tailored for specific kitchen dynamics. It is the ultimate primary cooking vessel for students, bachelors, or couples living in compact apartments. For larger, multi-generational Indian households, it shines as a premium secondary vessel—the perfect dedicated kadhai for tempering spices (tadka), boiling smaller portions of noodles, or achieving the perfect deep-fry on small batches of snacks without wasting an entire bottle of cooking oil.
⚠️ Dealbreaker Alert: Who Should NOT Buy This
Do not buy this if you are looking to cook full family meals—1.2 Liters (18 cm) will easily overflow if you attempt to cook curries for more than 2 people. Additionally, if you refuse to learn basic temperature control and expect the effortless, slide-right-off experience of Teflon, pure stainless steel will frustrate you. Food will stick if the pan is not properly pre-heated before adding oil.
User Intent FAQ & Troubleshooting
Why is my food sticking to this triply pan?
Unlike non-stick coated pans, pure stainless steel is porous at a microscopic level when cold. You must pre-heat the pan on medium heat for 2 minutes before adding oil. Once heated, the metal expands and the pores close, creating a naturally stick-resistant surface.
Is this pan safe for induction cooktops?
Yes. While the interior is SS-304 (which is non-magnetic for food safety), the outermost layer touching your stove is SS-430 magnetic stainless steel. This guarantees 100% compatibility and highly efficient energy transfer on all modern induction hobs.
Do the steel handles get too hot to hold?
Stahl utilizes hollow investment cast handles designed to dissipate heat. During standard, brief cooking tasks (like making tadka), they stay comfortably cool. However, during extended deep-frying sessions over high flames, thermal creep will eventually warm them, so keeping a kitchen towel nearby is recommended.

Technical Comparison: Pure Triply Steel vs. Single-Ply Steel
Many buyers are tempted to buy cheap, lightweight single-ply steel vessels for small tasks like tadka. However, thermal physics severely punishes single-ply metal on high heat. The 2.5mm Triply core in the Stahl Artisan changes the way you cook small batches.

Test Kitchen Showdown: Stahl Artisan vs. The 1.5L Triply Challengers
When buying a compact triply kadhai for tadkas, side dishes, or bachelor cooking, precision is everything. A small pan on a high flame leaves zero margin for error—if the engineering is cheap, your spices will scorch instantly. To see if the Stahl Artisan Triply 1.2L justifies its premium price tag in this niche category, we ran it head-to-head against the Hawkins Tri-Ply (1.5L) and the Vinod Platinum Triply (1.5L).
During our side-by-side evaluations, we ignored the marketing fluff and focused on raw kitchen abuse. We tested how evenly they bloomed mustard seeds on high-heat induction hobs, how comfortable their handles remained during heavy deep-frying, and how easily protein stains scrubbed off their SS-304 interiors.

Reality Check 1: Tadka & Small-Batch Efficiency
When evaluating pans this small, base diameter dictates oil usage. The Hawkins Tri-Ply (22 cm base) is unnecessarily wide for a 1.5L capacity; you have to pour in significantly more oil just to cover the bottom for deep frying. The Stahl Artisan (18 cm base) creates a deep, narrow pool, making it drastically more efficient for tadkas, boiling two eggs, or deep-frying small snacks. Stahl’s flared pouring edge also made transferring hot liquids completely spill-free compared to the flat edges of the Hawkins and Vinod.
Reality Check 2: The Handle Durability Test
The Hawkins features gorgeous Rosewood handles that block all heat transfer, but they are its Achilles heel—accidentally leave them over a high adjacent flame, and they burn. Put them in a dishwasher, and they degrade rapidly. The Stahl and Vinod both use all-steel handles, meaning you can ruthlessly scrub them or toss them in the dishwasher. Stahl takes a slight edge here with its custom Investment Cast steel, which felt more balanced in the hand than Vinod’s standard hollow-tube rivets.
Reality Check 3: The Price Premium Justification
At roughly ₹1,800, the Stahl Artisan 1.2L commands a ₹300-₹500 premium over its competitors. For that extra cash, you are not getting more volume (it is technically 300ml smaller). Instead, you are paying for the flawless mirror finish, the indestructible solid steel lid (Hawkins uses glass), the superior flared pouring lip, and the ultra-compact 18cm footprint. If you just want raw thermal mass for cheap, the 3.0mm thick Hawkins wins on paper.
🎯 The Definitive Buying Verdict
- Buy the Stahl Artisan 1.2L (18cm) if: You want a hyper-efficient, indestructible secondary pan specifically for tadkas, 2-person Maggi, and low-oil deep frying. The flared pouring lip and dishwasher-safe cast handles justify the premium price tag.
- Buy the Hawkins Tri-Ply 1.5L if: You are on a stricter budget and prioritize absolute maximum base thickness (3.0mm) for heat retention. Just be prepared to hand-wash it carefully to preserve the Rosewood handles.
- Buy the Vinod Platinum 1.5L if: You want the aesthetic and dishwasher-safety of an all-steel kadhai like the Stahl, but are willing to sacrifice the flared pouring edge and premium cast handles to save ₹400.

The most correctly made steel triply cooking vessel I’ve used. I’d bought a 20inch kadai more than 10 years ago…don’t feel comfortable cooking in any other. I quickly make a recipe in it, empty the food into a serving dish, very easily, quickly clean it with a swipe and cook another recipe in it. I have so many vessels… but want to use only this !!
Divya Krishnan –
Perfect size, easy to clean
Jyoti –
Best product.
Only one thing is not good… You can’t roast dry items like suji…

I’ve been using the Stahl Triply Stainless Steel Kadai for a few months now and I’m very happy with the quality. The triply material really makes a difference- it heats up quickly and distributes the heat evenly, which is perfect for curries, stir-fries, and deep frying. The kadai feels very solid and durable, and the lid fits well.
One thing to note is that it’s a bit on the heavier side, which can be a little tricky when it’s full. But I think that’s expected with good-quality triply steel cookware. It works perfectly on both gas and induction stoves, which is very convenient.
Overall, it’s a reliable and well-made product, just slightly heavy for everyday quick cooking. Still, I would definitely recommend it!

Ever since I got it, I simply love it more and more because of the below
1. Always shine as new. Great addition to my cookware and it feels so nice when some relatives just popped in and you are cooking in such a nice pan
2. As described, the product is aesthetically pleasing and it’s handles are not hot when cooking but after a while it does become very warm and some people might need a kitchen glove or towel to hold
3. Does not need to use much oil. I can even cook curries just using half teaspoon of oil. It still cooks as it should be and no sticking food. You just need to use medium flame.
4. I use silicon and wooden spoon. I know you can use steel as well but I am used to these materials in my kitchen for not hurting my cookwares
5. Super easy to clean as well. You just need to put a lil water, let it soak for some 2-3 mins and rub with a sponge and it’s clean as new. It’s even dishwasher safe.
So happy with my purchase I will buy more of other size

Amazing stainless steel kadhai. My bhabhi was using so i ordered the same from Amazon in India and my father in law got it with him to USA.
It requires less oil and you need to cook on low heat and make sure to prep and cut your vegetables before hand. I loved the kadhai.
Very very smooth to cook and food doesn’t stick.
I got the 3.2 litres size (26cms) and it is sufficient for 5-6 people. It is induction friendly and dishwasher safe. Good weight but not overly heavy. I am using on a electric stove cooktop.
Tips to maintain and use stainless steel Kadhai-
1. Use on low to low medium heat.
2. Cut your veggies/ food before hand.
3. Keep stirring and use very little water if the kadai feels dry.
4. If possible use wooden spoons/ spatula to stir.
5. Dont scrub too hard with steel scrubber while washing.
6. Place the kadhai in hot water before washing. The food particles will get soft and will easily come off while washing.
7. Wipe the Kadhai dry with a microfiber cloth or napkin dry after washing.
